Ingredients:
- 2 lbs chicken wings
- 1 head garlic, minced/crushed and fried crisp OR 1/2 cup store bought fried garlic
- 1 serrano or jalapeño pepper, minced OR 1 tbsp red pepper flakes
- 1/2 cup cilantro, chopped
- 1/2 cup 'Chi-Chee' kimchi hot sauce
- 2 tbsp chili oil
- 2 scallions, sliced thin
- 1 tsp white sugar
- 1 tsp kosher salt, plus more for the wings
- 1/2 tsp black pepper
- 1/4 cup fried shallots (optional)
- 1/4 tsp MSG (optional)
Directions:
1. Season the wings generously with salt and allow them to brine in the fridge for 2-4 hours. Pat the wings dry with a paper towel to get them extra crispy. Air-fry or bake at 400F for 15-20 minutes until done.
2. While the wings are cooking, mix the remaining ingredients for the coating in a large bowl. When the wings are done, toss them together with the coating and serve immediately.
