Who doesn't love a good sandwich? There are few things that aren't made better by existing between bread, this is no exception. Tangy goat cheese mixes perfectly with the rich red pepper flavor of Brimstone to make for the perfect creamy topping on this grilled chicken sandwich. Add a simply dressed arugula salad, fresh slices of tomato, and the zippy crunch of salt + vinegar chips to take this sandwich into the stratosphere!
Ingredients
Marinade/Dressing

½ cup extra virgin olive oil
-
⅓ cup red wine vinegar
-
1 tbsp dijon mustard
-
2 tsp honey
-
2 tsp Italian seasoning
-
¼ tsp MSG (optional)
-
salt + pepper, to taste
For the Chicken
-
2 chicken breasts, butterflied
-
salt + pepper, to taste
-
½ dressing/marinade recipe
Brimstone Goat Cheese
-
2oz goat cheese
-
¼ cup Brimstone hot sauce (or Brimstone Inferno)
-
splash of milk
Final Assembly
-
hoagie rolls
-
4-8 slices thick cut bacon
-
1 tomato, thinly sliced
-
arugula
-
¼ red onion, sliced as thin as possible
-
½ dressing recipe, maybe less
-
salt + vinegar potato chips
-
pepper, to taste
Directions
Prepare the Marinade/Dressing
Add all ingredients for the dressing into a bowl and whisk together.
Taste for seasoning and acidity, adjust with salt/oil/vinegar as needed
Prepare the Bacon
Preheat oven to 425F and lay slices of bacon on a foil-lined baking sheet
Bake bacon for 15 minutes or until your desired doneness
(optionally just fry the bacon off to your liking)
Prepare the Chicken
Season the chicken breasts using salt + pepper to your liking
Combine with ½ of the marinade for a minimum of 1 hour, up to overnight (longer is okay, it will neither hurt nor help)
Pre-heat your grill on High for 10-15 minutes
Grill butterflied chicken breasts 4-5 minutes per side or until done to an internal temp of 160F
Prepare Brimstone Goat Cheese
Combine goat cheese, Brimstone hot sauce, and a splash of milk in a bowl until combined and just spreadable
Prepare for Final Pickup
Combine arugula, red onion, dressing, and pepper in a bowl and toss to combine
Toast hoagie rolls in the oven until warmed through and just crispy on the outside
Slice open hoagie rolls and spread Brimstone Goat Cheese on both sides
Lay grilled chicken breast on top of goat cheese, followed by 2 slices of bacon, slices of tomato (seasoned with a sprinkle of salt), a portion of the arugula salad, and finally a crushed handful of salt + vinegar potato chips to finish
Consume immediately

This sandwich is built for Brimstone, but can easily be adapted to other sauces. Using the same quantity of sauce mixed with the goat cheese, simply change the flavor of potato chips (or use plain for an all-around winner). For Totec's Tears, I suggest your favorite BBQ chips. For Buffalo Soldier or Ava Masala, I recommend Sour Cream + Onion chips, and for Cinco + Chi-Chee, simple salted chips I think would work best. Happy eating!
