Potato Tacos with Totec's Tears Hot Sauce

This fantastic recipe takes inspiration from Taco Bell's Spicy Potato Soft Taco, bringing the delicious flavors together in a versatile potato taco bowl. It can easily be transformed into tacos by wrapping the ingredients in tortillas or combined with scrambled eggs for a delightful breakfast option.

For the Potatoes:

- 2 pounds yellow potatoes
- 3 tablespoons extra virgin olive oil
- 1 tablespoon kosher salt
- Pepper, to taste
- 1 teaspoon oregano
- 1 teaspoon coriander
- 1/2 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon MSG

For the Sauce:

- 1/4 cup Totec's Tears sauce
- 1/4 cup mayonnaise

For Assembly:

- Avocado, sliced
- Red onion, thinly sliced
- Fresh cilantro, chopped
- Cotija cheese, crumbled
- Tortillas (optional, for tacos)

Additional Suggestions:

- Charred corn
- Sliced radish
- Scrambled or fried eggs


1. Preheat your oven to 425°F (218°C) convection or 450°F (232°C) for a standard oven.

2. Cut the potatoes into 1/2"-3/4" cubes and place them in a large bowl. Add olive oil and toss to coat. Then, add the seasonings and toss again to combine.

3. In a small bowl, mix Totec's Tears sauce and mayonnaise to create the sauce. Lime is optional, but feel free to add it to taste.

4. When the oven reaches the desired temperature, spread the potatoes on a foil-lined sheet pan, ensuring they have enough space to crisp up. Use two sheet pans if necessary. Bake for 20-25 minutes.

5. While the potatoes are roasting, prepare your assembly toppings.

6. After 20-25 minutes, remove the potatoes from the oven and gently stir them. Place them back in the oven for an additional 15 minutes until they're crispy.

7. When the potatoes are done, assemble your bowl or tacos with the potatoes, sauce, and desired toppings.
