The origin of this exceptional hot sauce can be traced back to the generosity of Don Sergio from Calfkiller Brewing Company. In the summer of 2018, a patron of the brewery gifted Don an assortment of homegrown hot peppers. After a brief conversation about my love for spicy foods, Don handed me a bag filled with habaneros, Thai chilis, Peter peppers, cayenne, and more! Excited, my friends and I decided to make a hot sauce using these peppers, and the name Brimstone Rimjob was born during a car ride filled with laughter.
Upon returning home, I started with a basic hot sauce recipe using garlic, onion, and apple cider vinegar. I broiled the peppers for a charred flavor, but after a taste test, the sauce was unbearably spicy. Determined to make the sauce delicious and edible, I searched my pantry for ingredients to tame the heat. The addition of fire-roasted tomatoes, roasted red peppers, plum jam, and more vinegar helped, but the magic touch came from tahini. Its fat content mellowed the capsaicin, while its unique flavor and texture defined Brimstone Rimjob's signature style. With some final tweaks to the salt levels, the sauce was perfected.
However, in my haste to create the perfect hot sauce, I didn't document the recipe. Tragically, the jar containing the original sauce fell and shattered, leaving me to recreate it from memory. With persistence and dedication, I've come close to replicating the original Brimstone Rimjob hot sauce. Each day, I strive to honor the legacy of that first, unforgettable batch.
